How to make Chocolate Chip Banana Oatmeal Muffins:

  • I love this stoneware muffin tin for baking muffins (usually you need to increase the baking time by about 5 minutes when using it though), but any regular muffin tin will work just fine
  • I like to use an ice cream scoop (like this one) to scoop the batter into the muffin tin – you get nicely domed muffin tops when you scoop it into the tin with one
  • Make sure to use paper or silicone liners (I have these ones), or spray the muffin tin with non-stick cooking spray or your muffins will stick as there is not a lot of oil in this recipe

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, lightly packed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup canola oil
  • 1/4 cup milk
  • 3 bananas, mashed
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375 degrees F. Line a muffin tin with paper or silicone liners, or lightly spray with cooking spray.
  2. In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl whisk together the eggs, oil, milk, and mashed bananas.
  4. Pour the wet ingredients into the dry and stir until just combined. Fold in the chocolate chips.
  5. Divide the batter between the muffin cups, they will be quite full.
  6. Bake for 16-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Can I use regular flour and old fashioned oats instead?

Yes, all-purpose flour will work just fine. And rolled oats are the same as old fashioned oats :)

hello, im thinking on if i can sub milk for almond milk and canola for coconut oil ?

@Stacey, I use avocado oil and add a cup of chopped walnuts. It turned out heavenly.

I haven't tried those substitutions myself, but I think they would be fine. I would melt the coconut oil before using it though.

Can I make a loaf instead of muffins. Will I have to ajust the heat and cooking time thank you

I haven't made these as a loaf, but it should be just fine. I would leave the oven temperature the same but bake for 50-60 minutes in a 9x5 inch pan, or until a toothpick inserted in the centre of the loaf comes out clean.
