It’s 30 Minute Thursday again, and I don’t know about you but I’m super excited to get some more quick and easy recipes to try for those crazy weeknights. Our evenings seem to be getting busier and busier as the school year goes on. There’s hockey or soccer or diving or something almost every night.
When did my kids get big enough to be busy with all these sports? That’s what I want to know. Just yesterday they were tiny and a busy evening was …. well, I don’t think we had them. The kids went to bed at 7 and we had the whole evening to ourselves. And yet I somehow felt busy back then. A different kind of busy I suppose – my days are a little less hectic now!
With those crazy evenings, I am loving quick and easy meals these days. Especially ones that the whole family will eat, and eat without any complaints while fighting over who takes the leftovers for lunch the next day. I’ve been really into making various types of takeout style food at home lately, and this easy beef and broccoli will be entering the regular rotation. Along with my baked lemon chicken and chicken chow mein. All amazing. All better than takeout, but so easy to make that I wonder why we ever get takeout.

I’ve also made it with sirloin or even a marinating steak. These photos were of a really inexpensive marinating steak and it was still amazing, so use whatever beef you like. Beef and Broccoli is one of my favorite dishes! I always have a terrible time picking out the meat though. I try to buy cheaper cuts, but they never work out.
Yeah, I always look at the flank steak but rarely buy it because it’s so pricey. This time I used a really cheap marinating steak though and it was still great. Sirloin is usually great too and a bit cheaper. Just don’t have it close to the time you have the expensive stuff – less noticeable then! 🙂

I cherish my quiet evenings after Kai goes to bed these days, I think it must have something to do with the terrible twos…all I can do is sit on the couch once he’s in bed! We live on easy dinner recipes, so I love the looks of this one! Looks delicious!

I’m with you, our weeknights feel insane lately. Although we are not at the sports stage yet so I can just imagine how much more busy it is for you. Haha, yeah, only the 4 year old still goes to bed at 7, the other two don’t. When they were little they did – but they were also up by 6:30 or 7 in the morning so there’s that! Easy meals are definitely the best on busy nights though! Thanks Kelly!

This time of year is just SO busy. I always struggle with dinner, but even more so now with Holidays approaching AND the fact that it’s dark (which makes me grumpy!) at like 5pm. This beef and broccoli looks so great! Can’t wait to try it out!
