It’s 30 Minute Thursday again, and I don’t know about you but I’m super excited to get some more quick and easy recipes to try for those crazy weeknights.  Our evenings seem to be getting busier and busier as the school year goes on.  There’s hockey or soccer or diving or something almost every night.

When did my kids get big enough to be busy with all these sports?  That’s what I want to know.  Just yesterday they were tiny and a busy evening was …. well, I don’t think we had them.  The kids went to bed at 7 and we had the whole evening to ourselves.  And yet I somehow felt busy back then.  A different kind of busy I suppose – my days are a little less hectic now!

With those crazy evenings, I am loving quick and easy meals these days.  Especially ones that the whole family will eat, and eat without any complaints while fighting over who takes the leftovers for lunch the next day.  I’ve been really into making various types of takeout style food at home lately, and this easy beef and broccoli will be entering the regular rotation.  Along with my baked lemon chicken and chicken chow mein.  All amazing.  All better than takeout, but so easy to make that I wonder why we ever get takeout.

Quick and easy beef and broccoli.  It’s ready in less than 30 minutes and the whole family will love it.  Who needs takeout on a busy night?  This is definitely better!

If you’re looking for more easy 30 minute meals, there is a whole list below the recipe.  Hope you find something you’d like to try!

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

  • 3/4 cup beef broth
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons corn starch
  • 1 tablespoon minced ginger
  • 3-4 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 1 pound flank steak, sliced thinly (1/4” thick) into 2” long strips
  • 4 cups broccoli florets
  • 1 cup shredded carrots

  1. In a small bowl, whisk together the beef broth, hoisin sauce, soy sauce, corn starch, ginger and garlic. Set aside.
  2. In a large wok or non-stick skillet, heat the sesame oil over medium heat.
  3. Add the sliced steak to the pan and cook for 3-4 minutes, flipping once, until browned all over.
  4. Add the prepared sauce and broccoli and stir to coat everything.
  5. Continue to cook for another 3-4 minutes until the broccoli is tender and the sauce has thickened slightly.
  6. If you have a lid you can cover it and just leave it for about 3 minutes and it will be done.
  7. Stir in the grated carrots and heat for about 30 seconds. Serve over hot rice.

Flank steak is delicious in this, but you can use any steak you like. I’ve also made it with sirloin or even a marinating steak. These photos were of a really inexpensive marinating steak and it was still amazing, so use whatever beef you like.

Beef and Broccoli is one of my favorite dishes! I always have a terrible time picking out the meat though. I try to buy cheaper cuts, but they never work out.

    1. stacey says:

Yeah, I always look at the flank steak but rarely buy it because it’s so pricey. This time I used a really cheap marinating steak though and it was still great. Sirloin is usually great too and a bit cheaper. Just don’t have it close to the time you have the expensive stuff – less noticeable then! 🙂

  5. I cherish my quiet evenings after Kai goes to bed these days, I think it must have something to do with the terrible twos…all I can do is sit on the couch once he’s in bed! We live on easy dinner recipes, so I love the looks of this one! Looks delicious!

    1. stacey says:

Thanks so much Sarah! I love cooking, but I do not have the time most weeknights to spend too long on it! Meals like this are perfect! 🙂

  6. Kelly says:

I’m with you, our weeknights feel insane lately. Although we are not at the sports stage yet so I can just imagine how much more busy it is for you. I totally wish my kids went to bed at 7 every night haha. Easy meals like this are exactly what I need! It looks so delicious and perfect for those crazy weeknights!

    1. stacey says:

Haha, yeah, only the 4 year old still goes to bed at 7, the other two don’t. When they were little they did – but they were also up by 6:30 or 7 in the morning so there’s that! Easy meals are definitely the best on busy nights though! Thanks Kelly!

I just got my kids’ basketball schedules, and that’s practice every single night between both of them! That means I need more great meals like this that will be a hit AND that I can get ready quickly. This looks amazing, Stacey, and I know my kids would love this!

    1. stacey says:

Every night?! Wow, that’s insane. Although I guess we’re not much different, we had one night free this week! The annoying thing for us is that we get the hockey schedule a couple weeks at a time and it’s different every week. Oh well – quick and easy meals are where it’s at right now! Thanks Marcie!

  9. This time of year is just SO busy. I always struggle with dinner, but even more so now with Holidays approaching AND the fact that it’s dark (which makes me grumpy!) at like 5pm. This beef and broccoli looks so great! Can’t wait to try it out!

    1. stacey says:

Ugh, the being dark so early totally makes me grumpy too. And yes, this time of year is SO busy – love having quick meals to make so we still eat decently! Thanks Liz!

  14. Am I a bad mom for dreading the time when I have multiple kids who all have multiple after-school activities they need to be chauffeured to and from? Haha! Your beef and broccoli looks absolutely scrumptious, can’t wait to give it a go!

    1. stacey says:

Haha, just think about the lack of diapers and needing to bring half your house every time you leave and you’ll feel better about it! It’s an okay trade-off! 🙂 Thanks Nora!

    1. stacey says:

Stir-fry’s in general are a hit around here, and so easy to throw together. We definitely loved this one! Thanks Sarah!

    1. stacey says:

Goes with the territory I think! Kids are always busy with something! But fast meals make it easier to fit in the cooking for sure. Thanks Laura!
